Starting a few weeks ago, I decided to do a 30-day challenge for myself that required 3 things… 1) no sweets or pop 2) drink more water 3) move my body.
No strings attached- not a diet. Just a month of being more intentional with my health.
I’ve found during these last few weeks, I’ve tried to find recipes for things that aren’t sugary but still can satisfy the craving for sugar.
AND I DID IT.
Now, before I share this game changer recipe with you, I want to preface that these still aren’t 100% healthy, but they’re healthier than your average cookie. All I did with this recipe to make it not as bad for me is replace all the sugars with a sugar alternative (I use Swerve, you use which one you like best).
Ingredients
8 tablespoons butter
1/2 cup white sugar
1/4 cup brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
dark chocolate chips (as many or few as you’d like)
Directions
Preheat your oven to 350 degrees Fahrenheit.
Melt your butter.
In a stand mixer, mix your butter & sugars together until combined.
Add in the vanilla & egg, but do NOT overmix.
Add in the flour, baking soda, & salt.
Add in dark chocolate chips.
Roll in 12 round balls and bake for 11 minutes. It makes 12 cookies.
Do NOT over bake. These are meant to be super soft cookies that melt in your mouth. Over-baking will result in less soft cookies.
Tips
The cookies were best once they cooled off a bit.
Don’t overdue it on the chocolate. I even made 2 batches with zero chocolate & they were still super good.
You might want to double the batch right away because you’ll want more as soon as they’re gone.
